 Filipino Pancit Canton

Ingredients:

  • 400 grams of Pancit Canton noodles (dried flour noodles)
  • 200 grams of chicken breast, thinly sliced
  • 100 grams of shrimp, peeled and deveined
  • 2 cups of cabbage, thinly sliced
  • 1 large carrot, julienned
  • 1 medium-sized onion, sliced
  • 4 cloves of garlic, minced
  • 1 cup of chicken broth
  • 2 tablespoons of soy sauce
  • 1 tablespoon of oyster sauce
  • 3 tablespoons of cooking oil
  • Salt and pepper to taste
  • 2 stalks of green onions, chopped for garnish
  • 2 pieces of calamansi or lemon wedges, to serve

Instructions:

  1. Prepare the Noodles:
    • Soak the Pancit Canton noodles in warm water for about 5 minutes or until they are just starting to soften.
    • Drain and set aside.
    • Be careful not to over-soak as they will cook further when stir-fried.
  2. Cook the Protein:
    • Heat a tablespoon of oil in a large pan or wok over medium-high heat.
    • Add the chicken and shrimp.
    • Cook until the chicken is browned and the shrimp turns pink.
    • Remove from the pan and set aside.
  3. Sauté the Vegetables:
    • In the same pan, add another tablespoon of oil if needed.
    • Sauté the onion and garlic until fragrant.
    • Add the carrots and cabbage, stir-frying until just tender.
  4. Combine Ingredients:
    • Return the cooked chicken and shrimp to the pan.
    • Add the drained noodles.
    • Pour in the chicken broth, soy sauce, and oyster sauce.
    • Toss everything together until the noodles are evenly coated and the liquid is absorbed.
  5. Season:
    • Season with salt and pepper to taste.
    • Continue to cook while tossing until the noodles are fully cooked and everything is heated through.
  6. Garnish and Serve:
    • Transfer to a serving dish, sprinkle with chopped green onions, and serve with calamansi or lemon wedges on the side for squeezing over.

Pancit Canton is a colorful, savory dish that showcases the vibrant flavors of Filipino cuisine. It's also highly adaptable, so feel free to include other vegetables like bell peppers or snow peas, or adjust the protein choices according to your preference.
